Baked Wild Icelandic Cod with Cherry Tomatoes
This dish is quick, easy and rewarding. It’s basically the trifecta of food: hardly any prep time, short cooking time and numerous health benefits in every mouthful. The holy grail of dinner, if you like.
Ingredients – 4 servings
- 4 fillets of wild Icelandic cod (6 oz), about 1-inch thick
- Sea salt
- Freshly ground black pepper
- 4 tbsp extra virgin olive oil
- 7 oz cherry tomatoes
- 1 lemon, sliced, plus more for garnish
- 2 garlic cloves, smashed but not peeled
- 2 sprigs thyme
- 2 tbsp freshly chopped parsley, for garnish
Directions
Step 1
Preheat the oven to 400°F and pat cod filets dry with a paper towel. Season all over with salt and pepper.
Step 2
In a medium bowl, combine olive oil, cherry tomatoes, lemon slices, garlic, and thyme.
Step 3
Brush a baking dish with olive oil. Pour tomato mixture into dish, then nestle in the cod.
Step 4
Bake until fish is opaque and flakes easily with a fork.
Step 5
Serve garnished with parsley, more lemon juice, and pan sauce.
This dish is perfect with some roasted potatoes and/or fresh salad.
